For raw Pu’erh, maocha is compressed into cakes, bricks, or tuocha and left to age naturally, developing complex flavors over years through slow oxidation. Ripe Pu’erh, invented in the 1970s, undergoes accelerated fermentation via controlled microbial activity, creating a mellow profile in months.
